賀年糕點食譜

我應該下星期先開工。



蘿白糕食譜就係中學家政堂學的﹕
INGREDIENTS:
Rice Flour (粘米粉) 150g
Tang Flour (澄麵粉)20g
Turnip 600g
Dried mushroom 20g
dried shrimps 20g
Chinese sausages 2
Chinese dried pork 40g (我也沒有臘肉)
oil 1Tbsp
ginger 15g
wine 2tsp (我也沒有下)
water 150ml

SEASONINGS:
salt 1.5 tsp
sugar 1.5 tsp (我改用半片片糖)

sesame oil 1 tsp
pepper a few snakes





METHOD:
1) Prepare steamer and grease a 16cm tin (我用了LASAGNE的焗盤﹐約18x10x2cm)
2) soak mushrooms and dried shrimps
3) Prepare ginger wine: grate ginger and add in 2 tsp wine
4) Clean, peel and grate the turnip (我用電動的grater切幼絲)
5) In a mixing bowl, mix rice flour and tang flour with 150ml water to form batter.
6) Dice chinese sausages,dried pork, mushrooms and dried shrimps.
7) Heat 1 tbsp of oil and stir fry the diced ingredieents, adding in ginger wine. Add into the batter.

8) Put the grated turnip to boil with the little water (if needed) and add in seasonings. Boil for a few mins till the nearly dry. Then add into the batter. Stir well until is thicken.
9) Pour this batter mixture into the greased tin and put to steam for 30mins. (can add chinese parsley, choped spring onion for topping..but i didn't)


年糕係媽咪教我整既, 其實做法好簡單﹕
1)用五份之四碗水煮溶180G片糖(其實應該用蔗糖﹐不過我買唔倒), 熄火,倒入mixing bowl
2)逐少將240G糯米粉篩入糖水拌混
3)加48G油
4)直接打入2隻蛋


5)混合後中慢火蒸一小時左右


馬蹄糕:


我只是用了五份一盒粉(50g),做了一個西式湯碗的份量,大約可以切到八片
,呢個份量用來解饞剛好。切咗三個邊食,唔錯喎,睇吓車邪肯唔肯食先。不過即使佢唔試,我自己食都冇難度。

我的做法是:
1) 50g馬蹄粉加100g水
2)75g糖加100g水煮熔,我用了冰片糖和黃糖(只是因為我唔想開一條新片糖,所以用黃糖搭夠),其實用其他糖都應該得,不過媽咪話馬蹄粉來身灰色,用片糖可以令到D色好D。

3)將20%馬蹄粉水和馬蹄碎加入糖水,煮至杰杰哋,熄火,加入其餘馬蹄粉水,混和好,蒸大約二十分鐘。媽咪話佢唔蒸,淨係不停慢火煮到透明,其間要不停攪。我因為懶,所以都係蒸方便D。


笑口棗:
做法好容易,200g麵粉,1 tsp 發粉混合,加80g糖,1/2 tsp 鹽,80g蛋, 最後加20g豬油,搓至成光滑麵團, 用保鮮紙蓋面靜止30分鐘。

然後搓成細細粒,碌芝麻。熱油落麵團,然後立刻熄火,好快麵團會浮起,這時再開火炸至上色便成。

原食譜話做到25-30粒,不過我做到差不多六十粒。

我今次無用電炸鍋,因為D芝麻會甩,怕洗機麻煩。

    1. 係呀,好似植物牛油狀,不過係白色。我上年整咗兩次,第一次都冇落豬油,唔記得係咪用咗牛油代替。
